Can't really help you there. But it would be a big undertaking, because the standard spindle as shown here http://www.toolsandmods.com/mini-lathe-parts-drawings.html is 30mm diameter (1.181") within the headstock, so it obviously can't be bored out to 1.125". Thus, you will need to fashion an entirely new, fatter, spindle, which in turn will involve larger diameter bearings, and boring out the housings in the headstock to take them. The bores of the hi/lo gears hidden with the headstock will need to be bigger, as will the bore of the spindle gear.

You will also need chucks with 1.125" bores; the standard ones aren't that big.

Good luck!

I've cut the end off it twice, but it's still too short

Well, not a easy project.

To make a new spindle up to 1" bore and 35mm outside diameter, there is at least two bearings to choose from:
Ball bearings: 6007 - 35x62x14
Tapered roller bearings: 32007 - 35x62x18 (I would say this one is your best chance)

For a spindle with 1.125" bore and 40mm outside diameter it's not that simple. The only one I found on a quick search on SKF website for a 40mm shaft/spindle was a 61908 - 40x62x12 ball bearing, but this one may be too fragile.

You may check standard bearing dimensions and have a look at some headstock pictures from a mod I did (no, not a spindle with a larger bore) at:
http://www.toolsandmods.com/mini-lathe-headstock.html
and spindle dimensions:

Good luck!
